Wow! Who would have thought something so simple could get such a great response. Who you ask? Me, that is who. I love simple. To me, simple is usually the best way to go. Learn from little kids, they will show you the joys of simplicity. Thanks to Heather of Randomosity and the Girl for hosting this Tuesdays With Dorie challenge and reminding us how less is more. I also would like to give kudos to my hubby who picked the jam, or preserve, selection of Apricot Pineapple. You are the best baby and you chose very well, and no, I am not talking about me for once.
For starters, I read everyone’s tips and quips on TWD’s site concerning the recipe. I have learned to do this, since being the amateur baker I am, it helps me beyond words. I learned that these cookies tend to have dark bums and very round shapes. I also learned that to get a less round cookie, you should flatten these babies a little beforehand. I also took the advice to not overwork the dough and observe baking conditions. My oven is a heat monster, so I lowered the temp and lessened the time the second go round. The first go round, I kept the temp, time, and rotation the same. The result, dark bottoms. The second go round, less time and no rotation. The result, less dark bottoms. The third time, even lesser time and still no rotation. The result. Perfect. Of course, I was so excited that I did not take pictures of this finale! I was also excited that my mess up of adding the preserves last did not come back to haunt me. I can see why Dorie chose not to picture these. It is hard to take a good picture of them, and they taste too good to not pose in a flattering light.
Although these cookies were very good stand alone, I had to contribute a little of my own character, so I spruced them up by drizzling my newly found fruit dip (cream cheese with marshmallows, with added confectioners sugar to thicken) and sprinkled tangerine peel zest on top. My family loved them. We all agreed that they did taste like little biscuits with jam. Being from a Dixie state, that is a wonderful comparison. I highly recommend these tasty little treats, especially on a chilly day like we had today in Texas! Don’t forget to see how my fellow TWD’ers fared with this recipe. I am sure they designed some beautiful creations.
